Ingredients (1 serving)
Base:
- 1 can (400ml) full-fat coconut milk, chilled overnight
- 2 tablespoons coconut water
- 1 tablespoon cane sugar or coconut sugar
- ½ teaspoon coconut extract (optional, for stronger coconut flavor)
Toppings:
- ¼ cup Purely Elizabeth® Ancient Grain Granola
- ½ cup fresh strawberries, diced
- ½ cup whole blueberries
- 1 medium banana, sliced
- 2 tablespoons chocolate hazelnut spread, warmed for drizzling
Instructions
- Combine the chilled coconut milk, coconut water, sugar, and coconut extract in a blender. Blend until completely smooth.
- Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft sorbet consistency. If you do not have an ice cream maker, pour into a shallow dish, freeze for 45 minutes, then stir vigorously with a fork. Repeat every 30 minutes for 2–3 hours until you reach a smooth, scoopable texture.
- Scoop the coconut sorbet into a wide bowl.
- Layer granola across one section of the bowl, followed by strawberries, blueberries, and banana slices arranged in separate sections.
- Warm the chocolate hazelnut spread for 10–15 seconds and drizzle generously over the entire bowl.
