Ingredients (1 serving)

Toppings:

  • ½ cup fresh mango, diced
  • 1 medium banana, sliced
  • 3 tablespoons shredded unsweetened coconut flakes
  • 2 tablespoons dried goji berries
  • 1–2 tablespoons honey, for drizzling

Instructions

  • Run the frozen pitaya packet under warm water for 10–15 seconds to slightly soften it, then break it into chunks.
  • Add pitaya, papaya juice, frozen strawberries, and turbinado (if using) to a high-powered blender. Blend on high until completely smooth and thick — the consistency should be similar to soft-serve ice cream. You may need to stop and scrape down the sides several times. Add liquid sparingly to maintain thickness.
  • Scoop the blended pitaya base into a wide bowl.
  • Arrange the mango, banana slices, shredded coconut, and goji berries across the top in separate sections or rows.
