Recipe — Make It At Home

Ingredients (1 serving)

Base:

  • 1 packet (100g) frozen pitaya puree
  • ¼ cup papaya juice blend
  • ½ cup frozen strawberries or mixed berries
  • 1 teaspoon turbinado or raw cane sugar (optional)

Toppings:

  • ¼ cup Purely Elizabeth® Ancient Grain Granola
  • 1 medium banana, sliced
  • ½ cup whole fresh blueberries
  • 2 tablespoons dried goji berries
  • 2 tablespoons natural peanut butter, warmed for drizzling

Instructions

  • Run the frozen pitaya packet under warm water for 10–15 seconds to slightly soften it, then break it into chunks.
  • Add pitaya, papaya juice, frozen berries, and turbinado (if using) to a high-powered blender. Blend on high until completely smooth and thick — the consistency should be similar to soft-serve ice cream. You may need to stop and scrape down the sides several times. Add liquid sparingly to maintain thickness.
  • Scoop the blended pitaya base into a wide bowl.
  • Arrange the granola, banana slices, blueberries, and goji berries across the top in separate sections or rows.
  • Warm the peanut butter for 10–15 seconds in the microwave until it reaches a drizzle-able consistency, then drizzle generously over the entire bowl.
  • Serve immediately.
